Roger Rabbit with Beer
half a rabbit in pieces
3 onions slices
1 beer (I used a Heinken 33cl)
1/2 tbs flour
2tbs crème fraiche
50gr. butter
1 bay leaf
salt and pepper
fry the onions in the butter for about 3 minutes, brown rabbit pieces on all sides, then sprinkle the flour and mix to allow it to go on all pieces. Pour the beer and stir, add the bay leaf. Cover and simmer for approximately 45 minutes stirring occasionally . Add the crème fraiche, adjust the seasoning and serve.
This is excellent with brown rice or noodles.
